The dehydrators can be used to dry everything from chilies, citrus, apples, pears, bananas, figs to flower petals - in short, everything from the orchard. Meat, fish, vegetables and herbs are also perfect for drying. When you dry, you extend the shelf life, but retain the taste. With a dehydrator, the chili/fruit is dried uniformly and ensures a great result. The dehydrators can be purchased in several variants, everything from the simple and compact dryer for the small household to a deluxe dryer in stainless steel with an electronic control panel and digital display.
Frozen chilies can last up to a year in the freezer, but there's even more time to spare if you dry your chilies. Dried chilies can basically last indefinitely, although they do lose some of their potency over time. There are several ways to dry chilies.
In India, chilies are sun-dried by placing them in a sunny and airy place. In Mexico and many South American countries, chilies are often seen strung on vines - called ristas.
In countries where you don't get much help from the sun, such as Denmark, you have to use hot air ovens, drying cabinets or dehydrators.
